Need an idea for those spotty bananas? Break them up, freeze them, and make this delicious breakfast smoothie. It’s a perfect way to get fiber, antioxidants, protein, and caffeine in a whirl.
I never seem to have time for breakfast, but I manage to make room to whip up this smoothie and pour it into a travel cup for my commute. And I feel naughty indulging in something so tasty that early in the morning.
The recipe below is how I normally make this smoothie. If you don’t have dates and vanilla on hand, just omit them.
Banana Mocha Smoothie
(makes 1 super serving)
1 banana, peeled and frozen
1/2 cup coffee (hot or cold)
1 cup almond milk
1 Tablespoon unsweetened cocoa powder
1 Tablespoon chia seeds
Sweetener to taste (I use stevia or 1/2 tablespoon agave nectar)
1/2 teaspoon vanilla extract (optional)
1 Medjool date (optional) (soak overnight for easier blending)

Blend everything till smooth. Add a handful of ice cubes for extra frostiness and/or if you used hot coffee.
